Vineyards

The vineyards are located in the north-eastern part of the municipality of Verona, a hilly area 300-500 m above sea level. The soil is clayey limestone with a consistent presence of rocks.

Harvest

Grapes are harvested from the last ten days of September to the end of October. The best bunches are selected and harvested by hand, placed in small 5 kg crates and dried for about 3 months.

Vinification and Ageing

At the end of the drying period, the grapes have lost more than 50% of their initial weight; this dehydration is not aimed solely at sugar concentration, but at developing their aromatic and polyphenolic potential. Once the drying process is complete, the grapes are pressed and fermented in steel wine vats at a controlled temperature for 2-3 weeks. Subsequently, the wine produced is aged in oak barrels for 18 months and then bottled.
